Fonio Coconut Porridge
January 28, 2024- Combine ½ cup water, ¼ cup Nafajama fonio and ½ tablespoon butter in a microwave safe bowl.
- Cover and microwave at high for 3 minutes.
- Fluff fonio with fork, cover for 2 minutes before serving.
- Add a little more boiling water if sticky or reheat if damp.
- Bring ½ cup water to boil.
- Add ½ tablespoon butter and ¼ cup Nafajama fonio.
- Stir, cover and reduce heat to low for 3 minutes.
- Remove from heat, stir and cover for 2 minutes before serving.
- Add a little more boiling water if sticky or reheat if damp.
Prep Time: 10 minutes Cooks times: 3 minutes
- 2 tablespoon olive oil
- 1 tablespoon lemon
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 cup cherries tomatoes
- 1/4 cup chopped cucumber, 1/2 chick peas, 1/2 cup green and red pepper, 2 tablespoon chopped parsley.
- In bowl combine olive oil, lemon, salt and black pepper.
- Add tomatoes, cucumber, parsley, chick peas, green pepper, red pepper, and prepared fonio.
- Mix everything and serve on a lettuce leaf.
