Make 6 small pancakes
Ingredients
- 1/2 cup Nafajama fonio
- 1 cup milk
- 1 large egg
- 2 teaspoons oil
- 2 tablespoons sugar
- 1/8 teaspoon salt
- 1/4 teaspoon vanilla
- 1/8 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/4 tsp xanthan gum
Instruction
- Combine the fonio flour, baking soda, baking powder, xanthan gum, cinnamon and salt in a medium bowl.
- In a separate bowl, whisk together the eggs, milk, vanilla and oil.
- Stir wet ingredients into dry ingredients until smooth.
- Heat a lightly oiled griddle or pan over medium heat.
- Pour the mixture onto the hot griddle or pan, flip when bubbly and edges are slightly dry, about 3 – 4 minutes per side.
- Flip and cook another 1–2 minutes until golden.
- Serve warm.
