Ingredients
- 3 tablespoons olive oil
- 1 medium onion
- 2 stick of celery
- Bell pepper
- 1 carrot
- Black pepper
- Salt
- 2 tablespoons lemon juice
- 80g mushroom
- ¼ cup Nafajama fonio
- 3 cups water
- ¼ cup diced tomatoes
Preparation
- Heat 1 tablespoon olive oil, add mushroom and lemon. Cook for 5 minutes.
- Add 2 remaining tablespoon oil, onion, celery , carrot, tomatoes and bell pepper.
- Add water, fonio, salt and pepper. Cook for 5 minutes.
- Bring it to boil and reduce the heat to low for 10 to 15 minutes.
