Ingredients
- 1 cup Nafajama fonio grain
- 1 cup water
- 500 g seafood mix (calamari, mussels, prawns, crab sticks)
- 5 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp white ground pepper
- 1 teaspoon ginger, minced
- 1 tomato, chopped
- 1 tbsp tomato paste
- 1 Green pepper, sliced salt to taste
Instructions
- Heat olive oil in a pan over medium heat. Sauté onion until lightly browned, then add tomato. Stir in garlic, ginger, white pepper, tomato paste and salt.
- Add seafood mix, continue stirring for 2 minutes.
- Add fonio grain and water. Bring to boil, reduce heat, and simmer for 5 minutes.
- Remove Mussels and set aside for garnish.
- Serve fried fonio with green pepper slices to garnish.
