Ingredients
- 1/2 cup Nafajama fonio
- 1 cup coconut milk
- 1 cup water
- 1/4 tsp salt
- 1/4 cup cream cheese
- 2 tbsp desiccated coconut
Instructions
- In a medium saucepan, combine the fonio, coconut milk, water, and salt.
- Bring the mixture to a boil over high heat, then reduce the heat to low and let it simmer for 5-7 minutes, stirring occasionally, until the fonio is tender and the mixture has thickened to a porridge-like consistency.
- Once the fonio is cooked, remove the saucepan from the heat and let it cool for a few minutes.
- Divide the porridge into bowls, then top each bowl with a dollop of cream cheese and a sprinkle of desiccated coconut.
- Serve the fonio coconut porridge hot and enjoy! Optional: You can also add a sweetener of your choice, such as honey or maple syrup, to the porridge before topping it with cream cheese and desiccated coconut.
