In a medium saucepan, combine the fonio, coconut milk, water, and salt.
Bring the mixture to a boil over high heat, then reduce the heat to low and let it simmer for 5-7 minutes, stirring occasionally, until the fonio is tender and the mixture has thickened to a porridge-like consistency.
Once the fonio is cooked, remove the saucepan from the heat and let it cool for a few minutes.
Divide the porridge into bowls, then top each bowl with a dollop of cream cheese and a sprinkle of desiccated coconut.
Serve the fonio coconut porridge hot and enjoy!
Optional: You can also add a sweetener of your choice, such as honey or maple syrup, to the porridge before topping it with cream cheese and desiccated coconut.
