Lettuce Fonio Salad

Fonio Coconut Porridge

Microwave Direction

  • Combine ½ cup water, ¼ cup Nafajama fonio and ½ tablespoon butter in a microwave safe bowl.
  • Cover and microwave at high for 3 minutes.
  • Fluff fonio with fork, cover for 2 minutes before serving.
  • Add a little more boiling water if sticky or reheat if damp.

Stove Top Direction

  • Bring ½ cup water to boil.
  • Add ½ tablespoon butter and ¼ cup Nafajama fonio.
  • Stir, cover and reduce heat to low for 3 minutes.
  • Remove from heat, stir and cover for 2 minutes before serving.
  • Add a little more boiling water if sticky or reheat if damp.
Prep Time: 10 minutes Cooks times: 3 minutes
  • 2 tablespoon olive oil
  • 1 tablespoon lemon
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup cherries tomatoes
  • 1/4 cup chopped cucumber, 1/2 chick peas, 1/2 cup green and red pepper, 2 tablespoon chopped parsley.
  • In bowl combine olive oil, lemon, salt and black pepper.
  • Add tomatoes, cucumber, parsley, chick peas, green pepper, red pepper, and prepared fonio.
  • Mix everything and serve on a lettuce leaf.
